Baking with Soy Milk?

Has anyone baked with soy milk before? I'm going to make banana bread.

Not yet but am planning on making a low carb flan for my husband. He's on a low carb diet and got some soy milk that he can't get used to. Perhaps the eggs, sugar substitute and vanilla will disguise the taste a bit. Give it a try and let us know how your bread turned out.
