Luscious Lime Divine

Ingredients:

½ cup (1 stick) butter
5 large eggs
1 cup sugar
Grated zest and juice from 5 small limes
1 ¼ cups heavy cream
Slivers of lime for garnish (optional)

Directions:

Melt the butter in the insert of a double-boiler over simmering water. In a medium bowl, whisk the eggs and sugar together until foamy. In a slow, steady stream, add the melted butter. Transfer the mixture to the double-boiler and gently cook, stirring, for 10 minutes or until slightly thickened. Remove from the heat and gently stir in the lime zest and juice. Transfer the custard to a large bowl and refrigerate until chilled, about 2 hours.

Meanwhile, in a large bowl, whip the cream until fairly stiff. With a wooden spoon, gently fold the whipped cream into the custard. Cover with plastic wrap and chill at least 4 hours before serving. Garnish with lime slivers just before serving. Makes 6 servings.
