Audeo, I used that calculator and disovered that my boiling point is 202 (I'm going to test that in a bit). What does this mean for my fudge? Do I boil it for less time or more?

If your water boils at 202 degrees, you will subtract ten degrees from the target cooking temperature, which means you will remove the fudge from the heat at 226 degrees...instead of cooking to 236! Also, you will be cooling to 102 degrees, instead of 110!
