Pralines, por favor?

Pralines are an extremely sweet candy mixed with big pieces of pecans, usually somewhat cookie-shaped at least what I've found. They're very popular in New Orleans, but way too sweet for my taste. Kinda like a fluffy peanut brittle, only sweeter. And with pecans.

Check out catseye's long post that links to a praline recipe. She starts talking about cookbook of Charleston food and how she didn't know there were different types of shrimp. Then others start talking about shrimp. Just like many threads today that wander somewhat off topic. :)

Something I am guilty of. But I am trying to change. So if you find me wandering, please rescue me. It is not intentional. :angel:
 
This is an Italian recipe for SALTY pralines:

Ricotta, Parmesan Cheese and Pistachios Salty Pralines

[FONT=&quot]5 ½ tbsp peeled pistachios (for the pralines)[/FONT]
[FONT=&quot]1 cup of ricotta cheese[/FONT]
[FONT=&quot]3 ½ tbsp of grated Parmesan cheese[/FONT]
[FONT=&quot]2 tablespoon olive oil[/FONT]
[FONT=&quot]salt[/FONT]
[FONT=&quot]pepper[/FONT]
[FONT=&quot]1-2 tablespoon of milk[/FONT]
[FONT=&quot]7 tbsp peeled pistachios (for decoration)[/FONT]

[FONT=&quot]Blend 5 ½ tablespoons of pistachios in a mixer to obtain a flour.[/FONT]

[FONT=&quot]In a large bowl put the ricotta and stir with a tablespoon to obtain a cream.[/FONT]
[FONT=&quot]Add the pistachio flour, the Parmesan cheese, the olive oil and mix well.[/FONT]

[FONT=&quot]Add the milk only if the mixture seems too hard to stir.[/FONT]

[FONT=&quot]With the mixture make little balls of the size of a walnut.[/FONT]
