Blueberry Lattice Bars

BLUEBERRY LATTICE BARS:)

1 cup butter (no substitutes), softened
1/2 cup sugar
1 egg
2 3/4 cup flour
1/2 t vanilla extract
1/4 t salt
FILLING:
3 cups fresh or frozen blueberries
1 cup sugar
3 T cornstarch

In a mixing bowl, cream butter and sugar. Add the egg, flour, vanilla and
salt; mix well. Cover and refrigerate for 2 hours. Meanwhile, in a saucepan, bring
the blueberries, sugar and cornstach to a boil. Cook and stir for 2 minutes
or until thickened.

Roll two-thirds of the dough into a 14 x 10 rectangle. Place in a greased 13
x 9 x 2 baking dish. Top with filling. Roll out remaining dough to 1/4 inch
thickness. Cut into 1/2 inch wide strips; make a lattice crust over filling.
Bake at 375 for 30-35 minutes or until top is golden brown. Cool on a wire rack.
Cut into bars.

Yield: 2 dozen

Bakersdozen, what type of baking pan do you recommend for this particular recipe?
Glass, light metal, dark metal, stoneware......?
 
jkath...I just used a light weight baking pan (metal) ...Bakersware or something like that.
Can't remember what its called...a 9x13-inch pan. I've never tried glass or the stoneware so not sure how they would work.
 
thanks! I go back and forth with my pans, depending on what I'm making. I really like stoneware for heavier foods, and lightweight metal for lighter foods. No particular reason why, that's just how I do it :)
 
Thanks for posting this neat recipe, I love blueberrie so I'll add this to my recipe collection...You can never have enough berry recipes :mrgreen:
