Chocolate Oreo Dessert

For my food tech class we have to make a dessert with oreos. Each dessert mush be identical and there must be 12 of them. The bottom layer is going to be a crushed oreo base, then some sort of vanilla filling, then chocolate ganahe then vanilla and chocolate ganache again. On top there will be a sheet of chocolate.

I want to make somthing like this but....

orange praline chocolat with macaroons - Dessert Professional

I was just wondering how to get this out of the tin and how to cut it cleanly?
I have 3 square silicon tins!

Thanks, Delicia
