Found this in a new slice cookbook I bought, I am going to try it during the holidays it looks good.
Fruity White Chocolate bars
90g slivered almonds
210g Brazil nuts coarsly chopped
135g dessicated coconut
150g chopped dried apricots
150g currants
35g Plain flour
250g white choc bits melted
160g strained apricot jam
180g honey.
Method
Preheat oven to moderately slow. Grease and paper 19cmx29cm slice tray.
Combine coconut,flour,nuts and fruit in large bowl. Stir in combined melted choclate, jam and honey. spread evenly into prepared pan and bake for 45 minutes in mod.slow oven. Cut into slices after cooling in pan.
Can be made a week ahead and kept in fridge or frozen for up to 2 months.
