1 cup flour
1/3c + 1 T confectioner's sugar
1/2 cup butter
4 large eggs
3/4c granulated sugar
1/2c lemon juice

Preheat oven 350
Mix flour and 1/3 cup coinfectioner's sugar in medium size bowl.Cut in butter until mixture resembles small peas.Mixture will be dry and crumbly.Press into the bottomof an ungreased 13x9 baking pan.Bake 15 minutes or until lightly golden .
Meanwhile with mixer on high speed beat eggs for about 5 minutes until pale and thickened.
Gradually add granulated sugar and continue beating until mixture is thick about 2-3 minutes.
Stir in lemon juice.
Pour onto hot crust and bake about another 15 minutes or until golden and pick inserted in the center comes out clean.
Sprinkle with remaing tablespoon of confectioner's sugar.
Cool completely in pan on rack.

Made these a few weeks ago. YUM! Thanks for the recipe! (I did put a chocolate frosting on them...couldn't help it)

:chef: I never thought of putting chocolate frosting on them but, it sure sounds good!!!I'm glad you enjoyed them!!!!
