Today I made pan fried chicken so I could make gravy. Mashed potatoes, roasted carrots and fresh asparagus to go along with it. There's ice cream calling my name from the freezer, but I don't think I can waddle back to the kitchen right now.

We went out for Thai food. I had Nam Sod and pad Thai. DH had chicken in red curry and DS had chicken satay.

Yup. I remove the casing, cut it up and crumble it up while frying. I through in a few mushrooms today, also.

Fresh Tortillas? Is that the Fire Roasted Salsa? I recognize the Mexican Rice. I think my vacation menu is set, I'm eating what you have posted.
