Breakfast Sunday April 9?

I like to make a big breakfast on the weekends, so I made some fresh fruit salad, and will make a bacon and potatoe frittata (Mish's recipe).

DH can't eat breakfast, stomach problems, son won't eat big, so it's cereal for him. So, I don't make anything for breakfast. The last time I did, it all went to waste. We're having breakfast for dinner instead :o)


Now, that was a change!! Son let me make him french toast and eggs! Cool!

Usually I would make a large skillet of fried potaotes with peppers and onion accompanied by an omelet. Or I would make the omelet with the fried potatoes etc. and serve with tomato slices and hot sauce. Although, I was informed last night a diet is in our future and I am pretty sure the fried foods will be the first to go. Maybe I will make a chicken omelet and a side of fruit salsa.

This is the first weekend HB has had off in 5 weeks, and he really needed the rest. He's going to make bacon and fried eggs after while. I'll do the toast.
