Rock - forgot to ask before, how about sharing the recipe for the corn hash.. it looks great.
2 Cups of corn ( canned or frozen. I cleaned 4 leftover cobs for this one)
half can red kidney beans
half onion chopped
half cup chopped peppers(any color will do)
garlic
olive oil
chicken broth(half cup)
chili powder

Soften garlic and onions in oil. Add remaining veggies and heat through, add about half cup chicken broth and chili powder and simmer for about 10 minutes. Salt and pepper to taste and serve...

I never really measure, but this is approximately what I would use. Same goes for seasoning. I went with a southwestern spice blend and lime for the salmon, so I just added chili powder to stay with similar flavors....I have also started with a piece of chopped bacon.

Well I don't have the nice plated photos some of you have posted but instead a snapshot of that crazy man roadfix doing his thing last night.

Looks even better. I would rather be outside cooking if I could be.
