Slight change of plans here too. Couldn't dig the pork tenderloin out so chicken breast something or other will be on the menu. I'm thinking the mango will feature in there and I have some hot peppers that are ripe. Grilled mango and pepper salsa on chicken breast? Rice and salad to go with.
 
Gosh--THAT was the rain that kept you home? We had about 5 minutes of a light rain around noon...sigh, not enough. :(
We ended up getting over an hour. And it was at that crucial point where I had to decide to go, or not. Just as well, it is raining again now and has been overcast and drizzling for most of the day here in Cobden
 
I've been craving enchiladas somethin' fierce lately. But I'm also being terribly lazy today. :) If I can get up the energy, I'll make a Mexican feast this afternoon, with refried beans and spanish rice. Should do that today while my cilantro is still fresh. :yum:
 
I'm going to wander over to the Pizzeria Uno, well they are called Uno Chicago Grill now, and get me some deep-dish pizza!
 
I made seasoned pita chips and tzatziki this afternoon and have chicken legs and thighs marinating in lemon juice, garlic, oregano, olive oil and S&P. Can't decide whether to pan-grill or outside-grill those. I'll also toss some garden tomatoes with Olive Garden copycat dressing to have alongside. DH is away at a conference for the week, so it's just me.
 
Well, along with everything else I made pico de gallo to snack on with our new peppers.

Do you mind sharing your recipe for enchiladas. I made some today from a recipe i found but they had no flavor. And we didnt really like them.
 
DxW made a small beef roast and roasted carrots today. Mash potatoes and gravy. She also made an " everything" coleslaw with cabbage, carrots, celery, green bell pepper, an unidentified hot pepper, it wasn't jalapeno, it was hot !! spicy and great little zingers, and something else I couldn't Identify-- veggies from her CSA delivery this week.

We made lots of jam/ jelly today too, and had crackers with smoked cheese and spoonfuls of jelly to test out for afternoon snacks. I am stuffed!!:pig:
 
Grilled boneless, skinless chicken breast with creole sauce, red beans and rice, sautéed haricots verts with red bell pepper, shallot and chopped garlic, and an N.V. Il Papavero Vino Da Tavola Bianco
 
We had French omelette with chives and oregano from the garden and feta; served with buttered whole grain toast and heavy, dark, rye toast. For dessert: a mixed berries mousse. I would have taken a picture of the mousse, but it wasn't very photogenic. It's really good though.

alix, i would have thought you'd need a greenhouse to get good peppers up by you. good job! my first peppers are ok, but thin walled.

so, for our dinner my boy and i made the snapper in foil packets. he helped me add the herbs, and s&p. when it was cooked and i brought it upstairs, the little guy decided he wanted to make something he saw on tv. "a spoonful of some tasty ingredients". i laughed and realized the he meant an amuse bouche.

here's his amuse bouche: minced shallot and chopped chives mixed with sour cream and a piece of red snapper:

it was freakin' delicious!! lol. :chef:


here's the snapper (with garlic, lemon, s&p, lemon thyme, and pineapple sage) ready to be folded up:

dw made baked spuds and steamed stringbeans to round it out. sorry, no fianl shots. we were too hungry.
