Dinner Menu Thursday the 15th

What's on the menu for today?

I'm planning to make Chinese pepper steak and white rice for dinner.

I think I might do a pot roast tonight. Got all the ingredients, and all the fixin's and it looks cold and wintery out there. It will also leave the oven free for me to bake a jillion cookies. I'm in the mood to bake!

Boneless pork loin chops (not sure if I will brine first).
At the moment I am unsure how I will cook them.
I am leaning toward one of these ways.
First pound thin then:
1) bread and fry
or
2) adding a layer of stuffing then rolling, tying,
seasoned flour dredge, pan sear, finish in oven
or
3) season, pan fry and simmer in the gravy.
Stuffing was a request so it will be a side or a
filling. Gravy and a salad (may be some steamed carrots or mixed veggies also) will round out the dinner.
It depends on how the day goes.

I'm tired today, and it is only 7:58 AM. I'm going with a grocery store rotisserie chicken, jasmine ginger rice, and broccoli. Simple and easy to clean up since I don't have to cook the bird.

Chicken in my home made tomato sauce for us tonight. Just set up my new Samsung 32" full HD LCD TV I won in a competition last week, so I don't intend on being in the kitchen much!

Tonight's dinner will be roasted chicken drumsticks. I'll sprinkle them with adobo seasoning and coat them in a little bit of olive oil and roast in a 400* oven. On the side we'll have mashed potatoes and green beans.

I decided to pick up some country style pork ribs at the store on my way back home. I'll season them, sear the heck out of them on the grill, then toss them into the pressure cooker for 20 minutes. I haven't made these in a year and am looking forward to dinner.
