Chicken meatballs sound tasty, Kylie!

Today I have Chef Maloney's hamburger soup in the crockpot, and I'll make garlic bread for dipping into it.
 
We'll probably just do leftovers. Have rehearsal tonight. Leftover turkey, pizza, and chicken. DH is gone on a business trip so just the yungun and me at home.

Chicken Meatballs Recipe - Oprah.com


Ingredients
  • 2 pounds ground chicken thighs
  • 1 Tbsp. salt
  • 1 tsp. ground fennel seed
  • 1 tsp. ground black pepper
  • 1/4 cup white wine
  • 1/2 cup parsley, chopped
  • 1 cup dried bread crumbs
  • 2 eggs

Active Time: 20 minutes
Total Time: 45 minutes

Preheat oven to 450°. Mix all ingredients in a large bowl and stir until combined.

Grease a 9 x 13 baking dish. Roll mixture into golf-ball-size meatballs, packing them firmly (wet hands to prevent meat from sticking; alternatively, you can use an ice cream scoop). Place meatballs in baking dish in even rows so they're touching.

Bake until meatballs are cooked through, about 14 minutes. Let rest 5 minutes, then serve.

That reminds me of this recipe I made a while back. I'll have to make that again soon. Tis the season for anything combining gravy and noodles :)

Turkey pot pie with new and used vehicles, erhm, vegetables, with biscuits on top and more biscuits with butter and honey. No more turkey.
 
Nuked "baked" potatoes with cheese, sour cream, ham and green onions.
 
I'm not very hungry after the not-so-good pizza I had for lunch... I'm thinking a crock of french onion soup and maybe (very slight maybe) a twice baked potato.
