Tonight is stuffed jumbo shells with sauteed garlic, onion, mushrooms, spinach, herbs, and 3 kinds of cheese. Topped with tomato sauce and Parmigiano Reggiano.

If you make this, I would definitely add a few chopped tomatoes (it needed some liquid) and maybe kick up the spice a little more. I could see adding something like a teaspoon of chili powder.
