Here is what I ended up making. I roasted some butternut squash. Once that was almost done I cooked some bow tie pasta. In a saute pan I put some evoo with a few cloves of minced garlic, red pepper flakes, and dried cranberries. As I pulled the squash out of the oven I mixed the pasta in with the sauce and seasoned with salt and pepper. It was a very satisfying meal. The only thing I would do differently next time would be to toast some pine nuts and add those as well for a little crunch.
