We are having enchiladas tonight. We don't have any black olives, so they won't be quite as good, but still good. :cool:

I made my "Chicken Hungarian Goulash" last night (bite-size chicken, onions, celery, tomatoes, white wine, chicken stock, sauerkraut, hot Hungarian paprika, sour cream, etc.) served over buttered egg noodles.

I had planned on serving it tonight (Saturday) in honor of horror film great Bela Lugosi's birthday, but turns out we're dining out & hitting a movie tonight, so had to celebrate for Bela last night. : )

last night, i finally was able to make my chicken/eggplant parm lasagna.

it was good, but needs tweaks to make it what i'm trying to accomplish.
