Ended up making Himself's old college go-to, tuna and rice casserole. You can tell it's easy-peasy since Himself actually cooked it at one time. Not no more... Couple nights back when I hadn't a clue what to make it was one of three things I considered. I've had a taste for it ever since! So easy, 3 to 4 cans of stuff, Minute Rice, and half an hour of waiting. Spent the waiting time chowing down on salad.
Linguine with sauteed garlic, mushrooms, and black olives with a sauce of canned whole tomatoes, dry white wine, herbs and spices. Served with lots of grated Parmigiano Reggiano.
Later we'll have homemade deep dark decadent chocolate ice cream for dessert.
