I roasted a boston butt w/ mole style spices and then served it up "Chipolte" style by making some black beans (seasoned w/cumin, onion and finely chopped cilantro stems) & lime + cilantro brown rice. Soooooo so good, I wish I had room for more.

We had Ricotta and Ham Calzones and a tossed salad of romaine and marinated feta-stuffed green olives, grape tomatoes, spicy red pepper slices. Last of the gubana for dessert.

We had TNT Pork with Mushroom Herb Sauce with a salad with homemade vinegraitte and brown basmati rice. I'm thinking about making banana bread muffins.

Me too!

I made a lemon and herb roasted chicken today. I did roasted veggies with it and steamed kale. It turned out really well! The best part is there are leftovers! YUM!
