I've been on a "curry" kick. I took some tomato puree that was in the freezer from last summer, potatoes, carrot, mushrooms, chickpeas, black beans, cilantro, celery, curry powder, cumin seeds, turmeric root, ginger, lemon zest, a bit of Frank's Hot Sauce and made a "one-pan."
Thanks, Kylie--it was tasty. I am trying to add more beans to my diet (3-4 times/week), so using the black beans and chickpeas as the protein worked for me. And, the leftovers were great with a couple of fried eggs on top...see, leftovers can be a good thing <g>.
