I could not believe how perfectly the fish came out. We both loved it. I found boneless/skinless catfish on sale a few weeks ago, buy one get two free, so I got it. Absolutely all I did was rinse it, coat it in yellow corn masa flour, sprinkle it with Vermont Country Seasoning Blend, and fried it. So simple and so delicious! I was kind of dreading making it because I figured I'd mess it up, but now I am looking forward to making it again.

This was ... great comfort food on a chilly night!

Market had lovely thick Cod filets, which sent me scurrying to research Basque-style recipes to prepare them. Combined & tweaked a few into what became a real keeper of an original recipe. Once I get my notes together, will post it over on "Seafood".

Served it with a nice warm "Olive Herb" baguette & a big green salad.
