I could not believe how perfectly the fish came out. We both loved it. I found boneless/skinless catfish on sale a few weeks ago, buy one
free, so I got it. Absolutely all I did was rinse it, coat it in yellow corn masa flour, sprinkle it with Vermont Country Seasoning Blend, and fried it. So simple and so delicious! I was kind of dreading making it because I figured I'd mess it up, but now I am looking forward to making it again.
