I cooked up the rest of the chicken drumsticks I thawed out yesterday.

I have a couple of big portabella mushrooms, and I think I'll plop a couple of big meat loaf style meatballs on top of each one and bake them with a spicy tomato sauce on top. I'll take a picture if they turn out purdy...;)

Dang, they turned out really good! I laid a quartered slice of Swiss cheese inside the mushroom first. Here's the pictures.

we had a version of surf n turf tonight.

well, dw came home with a coupla tuna steaks, and i had prepped some sirloin steaks for the grill pan, so dw had surf, my boy had turf, and i had both.

the steaks were abused with a jaccard, then sprinkled with kosher salt, black pepper, and granulated garlic. maybe 2 minutes on each side in a screaming hot grill pan.

the tuna steaks then were seared but left raw inside, served with a ginger teryaki dipping sauce.

nuked sweet potatoes and rolls and butter for the starch.

Thanks, MsM! There's really no recipe, I just threw together my usual meat loaf mixture of saute' bell pepper, onion, celery & parsley with panko crumbs, egg, tomato sauce and spices. For the sauce I combined some tomato sauce, ketchup, vinegar, brown sugar, hot pepper flakes and simmered till thickened. I will most definitely be doing this again. The mushroom cap was a great vessel for the cheese, meat, sauce combo and eating it in sliced wedges gave you a bite of everything.

I didn't use a recipe or measure anything out.... the seasonings were italian seasoning, garlic powder, and salt-n-pepper. The cheeses were mozz and parmesan. The sauce was made from milk, butter and the cheeses. I partially cooked the broccoli in the microwave, then added it to the pan with the chicken. It simmered for around 12 min. Let me see if I can get some ingredient amounts, but if they're not right on, I would feel terrible.
