Finally tried making some breakfast potato skins

I baked 4 potatos for about 35 minutes at 400 degrees. While doing that I also made 4 scrambled eggs. I figured 1 egg per 1 potato.

I pulled the potatos out, cut them in half, and used the knife to carve them out. Then I put spray butter into the inside, some cayenne, lettuce, and then added scrambled egg in as filling. I also put some shredded cheese on top. I let it bake for another 5 minutes to heat the eggs back up and melt the cheese.

I thought the potato was a little crumbly but it looked and tasted good. It could've used some bacon but I didn't have any on hand.

I've got the left over carved out potato in the fridge wich will be used for another breakfast this week.
 
I've never thought about doing this with eggs! Thanks for the suggestion...
Now...did I read this right? Only 1 potato back in the fridge...that means you ate 3! hehehe.
