I have to admit that I cheat with my pork Char Siu.There is a wonderful marinade in an envelope that I find at the local Asian market. It's called "NOH of Hawaii, Chinese barbecue Char Siu seasoning mix". I don't use the water it calls for, but rub it into the tenderloins and pop them into a zip lock bag in the fridge overnight. The flavor and red color is just perfect. I hope you can find it there.
