I agree Eric, I think George Stella, and family are Very "realistically" Inspirational. I am a "Skinny cook" "Never trust a skinny Chef" ) lol! (joking) But, I respect,and admire ALL people, with Outstanding Tenacity, and Dedication. I was quite suprised to learn from his research, That a Bell Pepper contains 3 Times more vitamin "C" than Citrus. :D Atomic Jed!

I'm going low carb, part time due to the fact I need to lower my blood sugar. The weight loss will come along with proper diet and exercise.

As I am a great chef in a professional kitchen, my low-carb cooking at home needs a little fine tuning. I hope this'll help out.
