Green Eggs and Ham - Dr Seuss Birthday!

Happy Birthday Dr. Seuss!

In honor of this auspicious day (and for lack of any better ideas) tonights dinner will be an ode to his most famous menu; Green Eggs and Ham.

In the original book, both the eggs and ham were green and while I'm not quite ready to put green ham on the table and also not a fan of green food coloring here's what I'm contemplating:

  • Omelets stuffed with avocado and green chilies, topped with chopped cilantro, salsa and a bit of cheese.
  • A parsley infused, seared polenta cake topped with a drape of prosciutto.
Got any good or fun ideas for a green eggs and ham meal?

I love me some Dr Suess!! I saw this picture of green eggs on foodgawker and it turns out they used spinach juice to make them green. Too cute.

You could add some pesto I suppose. I don't know how good it would be, or salsa verde.

I really like this idea, especially since it doesn't include artificial colours. I'll be keeping an eye on this thread.

Hmmm! eggs scrambled in spinach juice... that don't sound too bad of an idea. :)

I like shredded spinach in my scrambled eggs. And I like the idea of green polenta and prosciutto!

Most of all I love Dr. Seuss!

An update: After examining the larder and giving into the lure of fat, we had poached eggs on the afore mentioned parsley polenta cakes covered hollandaise with a green goddess twist. I added chervil, chives and tarragon to the sauce.

The ham portion of the meal was canadian bacon - not green, but under the sauce, it might as well have been.

I made a little vinegar based shredded cabbage/apple slaw to go with.

Good meal :)

I'm thinking about a Chili Verde (vegetarian) over eggs and ham.

When my boys were in 1st and 2nd grade, I would make those little pretzels, topped in white chocolate with a green M&M, they looked like green eggs and ham.

I remember my mom always trying to get the kids to eat green eggs. I was sceptical, but once I had them, I loved them.
