Yesterday's menu was BBQ wings with a twist. I had some cilantro pesto in the freezer. Thawed that, added about 2 tsp light soy sauce, some grated lime peel, 1-2 T EVOO, and 2 tsp maple syrup. Let the wings sit in that for about 2 hours (in the fridge). Fired up the propane BBQ and cooked the wings until the internal heat was 165-170, served this with grated cabbage dressed with grated jalapeno pepper, toasted cumin seeds, some smoked sea salt, and cider vinegar. The wings were very juicy and tasty. Next time, I'd probably make the pesto for this dish and add more garlic and maybe incorporate the soy sauce in with the pesto. I had some garlic dipping sauce ready, but we forgot that! No pics, I was too hunger and couldn't wait.
