Earlier in the week I was going through the freezer and found a rib roast with a date of 2014 on it. Normally I would save something like this for a special occasion but, given its age, decided I might as well cook it up. Once it thawed, I used a dry rub of kosher salt, garlic, cracked pepper, thyme, and rosemary and let it sit in the fridge a couple of days to get it seasoned all the way through. It came out great. Probably the best rib roast I've ever made. I think letting it sit for two days with the spice rub really enhanced the flavor.

Oh, and I also had some leftover coleslaw, too. It was funny because I took the roast out of the oven and realized that was all I had cooked. No side dishes. I guess with a good roast you don't really need any sides, but I finished up the slaw anyway.

It was a good sized roast. I'll probably be eating off this bad boy for the next three days.

Taco Salad here tonight, although I'd rather have what you're having Dawg.

I haven't had any pasta in almost a year and I'm going to think hard about my favorite pasta dish, and eat it one day soon. Hmmm, something to think about.

We made our first set of pot stickers for the dumpling challenge. Had a busy day besides that so pics will follow tomorrow cause I am whipped.
 
Steve! That slice of rib roast looks so tender and delicious, I could almost taste it across the miles. YUM

tenspeed, like most of Chef John's recipes (I love his videos!), that looks and sounds really good. Tarragon isn't one of my most favorite of herbs, but I want to give this a try and see if my taste buds may have changed a little over the years. Looks fantastic!
 
We are on our way to Michigan to visit DH's parents for a week. We're spending the night in West Virginia. DH went to a local Italian (really Mediterranean) restaurant to pick up dinner and we ate in the hotel room. I had kefta kebabs with rice, hummus and salad and DH had chicken kebabs with rice, baba ghanoush and salad. Not bad for road food.

Cheater dinner today, as in nothing was cooked from scratch by me. Fish counter fried fresh haddock, and colors. No beige fish dinner tonight! :LOL:

Yum! ~ I don't know what route you take, but if you're on I-90, Michael Symon's B-Spot Burgers is in the casino on the square in downtown Cleveland. If you go across on the turnpike (I-80), it isn't too far to the Strongsville location. If you want to try and eat at one, you might want to route yourself home via a B-Spot. :yum: Then again, you just might want to go to the one he opened recently in Deetroit. ;)

We'll be taking the turnpike from 76 in WV. We might try to stop in Cleveland on the way back. I'd love to hit up one of Michael Symon's restaurants :yum:
 
Mom took me to lunch and I had a kick-butt Green Chile Posole with pork...wish I had more.
 
So yummy. One of my favorites. We brought garden Anaheim and jalapeño peppers to make posole for my FIL while we're in MI.

Ive had chicken posole and pork posole, but never in this green chile broth...it was so good.

Hey, drive safe!!! No posting and driving...
 
My pork posole includes green chiles and cilantro, so it's muy verde ;)

No worries, PF - we're safely in a hotel room right now. Also, I don't drive DH's F-150 unless I have to. He'd rather do all the driving and have more room than take my Ford Escape Hybrid and share driving duties. Works for me - I get more reading done ;)

Worked late. Catered for 120. Drove my daughter into the city so we stopped for some Vietnamese...rice paper rolls, fried shrimp in won ton wraps, the girls had pho, and I had a soup called Bún Bò Huế Đặc Biệt. Spicy broth, ham balls, beef, and round egg noodles....pretty good, but I'll get the pho next time, or maybe some coconut soup with shrimp...
