Meatless Monday--whatcha cooking? (09-15-2014)

Inspired by this recipe:

Melanzane Fritti Recipe | Eat Drink Italy with Vic Rallo

I'm going to use up the last two eggplants from a friend's garden, add some swiss chard, maybe some black olives, and make the tomato sauce from fresh tomatoes.

I've got OCD--Obsessive Chicken Disorder!

chicken sandwiches with chips and dip. Ate really healthy all weekend with lots of salads and fruit. Need my junk food fix!

even though everyday is Meatless Monday for me, here's what I got cooking today

For toight, Mushroom Mac and Cheese stuffed portobella caps.
Inspired by the following recipe ( Not following it exactly)

and Im also preparing vegetarian chili, which is actually for tomorrow night.

light supper of TJ's Pita Bites crackers,
sliced Fuji Apple
TJ's mini Brie bites with my homemade
Meyer Lemon Marmalade on top
... oh and a glass (or three) of what else?
TJ's 'Three Buck Chuck' Sauvgnon Blanc
later this evening we'll finish off our deluxe brownies
