It's not going to be meatless Monday here.


I'm doing pan fried bacon wrapped Fillet Mignon with scalloped potatoes and SC will make some loaded salads.


What's going on at your house today?
 
Breakfast for dinner. Corky's potato latkes, sausage patties and fried eggs. Applesauce and sour cream to go with the latkes. Everything is kind of brown, but it was good.

Younger DD came for dinner tonight and we tried a new recipe with her homemade pesto. Chicken cutlets coated with pesto and panko then fried. Pilaf and butternut squash to go with the chicken. Apple squares and vanilla ice cream ensured we had a balanced diet.

It's just an inauthentic recipe for carbonara that I learned decades ago. It has sour cream or yogourt, eggs, grated parm, a bit of dry or fresh basil, and white wine in the sauce. It also has bacon and thinly sliced scallions or chopped shallots. Toss with drained, freshly cooked pasta until it thickens. I usually toss it in the pot I cooked the pasta in, over very low heat.
