I looked at the from scratch recipes and it doesn't seem like anything too difficult, I've baked harder stuff before. But do they taste as good when you just buy a box of cake mix?
 
A scratch recipe will taste better, but a box mix with all it's preservatives will stay fresher longer once made.

Red Velvet cake was developed during war years when chocolate was rationed.
