Sept 19 201/Whatcha havin' for supper?

Last time we had moussaka, Karen made an extra pan to freeze along with some of the spicy tomato sauce. We are having that tonight. Just have to make fresh tzatziki. :yum:
 
We had our first frost last night, so I harvested some eggplant that would have otherwise gotten a little bigger. I will be fixing eggplant parmesan for dinner.
 
I'm defrosting a pork tenderloin. I plan rice or potatoes and a veggie as sides. Not sure what the preparation will be.
 
Tonight I am having the pork tenderloin sliders that got bumped by the bagel cheeseburger last night. That, and fresh fruit, as usual.

The weather is cooling down here in the desert, thankfully. This evening's dinner was a plate of comfort food - a couple of slices of leftover meatloaf, mashed red 'taters, and steamed carrots.
 
Salads, and "ta-da" Smothered Chicken. Seriously, there IS chicken under there! Oh, and cornbread muffins. :yum:
