There seems to have been a glitch in the system....trying again with a pic of this afternoon's pan seared scallops dinner. :chef::LOL:

I've mentioned this appetizer before, which we had last night. Finally took some pictures. We used some of our homemade chaurice, but have also made it with fresh Mexican chorizo.

We removed the casings and browned the chaurice.

Drained on paper towels and spread out in a baking dish. Then covered with cheese (muenster this time) and placed under the broiler for the cheese to melt.

Warm up some tortillas, by either tear pieces off or cut them and use the pieces to pick up the sausage and cheese while still hot.

The chaurice is spicy enough, IMO, that salsa or sauce isn't needed.
