Had a real treat sunday night. Went to a restaurant that uses this technique to do their cooking. It is also called cryovac cooking. In vacuum sealed bags at lower temperatures they use a water bath to cook the food. The restaurant is in Cedars Penna. not to far off the Lansdale exit of the Pa. turnpikes northeast exstension. Five course prefix menue. Five star food the restaurants name is Rosalie check out the website. BYOB and if you love fine food you will be delighted.
 
A wild mushroom crepe was the first course. That was followed by a spicey pumpkin soup. The entree was moroccan inspired lamb chops with cous cous and vegetables. A salad of delicate mixed greens, tiny apple cubes and carmelized pecans. The dessert was a banana coconut tart decorated with slices of peach and strawberry. Since it is a byob we brought a nice Malbec to have with the meal. Finished with a cup of coffee and some sweets.
