Mushroom soup. I had some sauteed mushrooms left over from last night, threw in some dried porcinis and shallots along with a bit of sherry and half and half.
 
Yankee Pot Roast with potatoes, carrots, celery and plenty of gravy. Then a nice long well deserved nap. Now for the cleanup. So worth it. I even had a slice of wheat bread to get all the gravy. :angel:

Tacos for me, too. I just finished an early dinner - two pulled pork tacos on lightly fried corn tortillas, with lettuce and tomatoes. Sliced avocado with lime on the side.

We're having Clay Pot Chicken Supper, which sounded really good and will the the maiden voyage for our Romertopf clay baker. Boy does it smell good in this house! Hope it tastes as good as it smells. I'll report later.


As promised, here's my report. The chicken was awesome. The fresh rosemary infusion was perfect and the chicken was tender and juicy. The vegetables were great, especially the onions. They were vegetable "candy."

I was surprised at how present the lemon flavor was in spite of the fact that there was only half a lemon inside the cavity. It was just a breath of lemon and perfect.

This recipe is definitely a keeper.

I'm doing thighs on the grill that have been marinating in Goya with added Sriracha, along with a basket of grilled Italian marinated veggies. SC will have some canned chili beans with his meal.

Dawg, did you get some of that BTB mushroom flavor for your soup? It's really good.

I grilled a porterhouse steak for the two of us. A ranch and bacon pasta salad and a tossed salad completed the meal. A glass of old vine zinfandel was a great way to wash it all down.
 
Round Table pizza, today, tomorrow, and Tuesday.

It's 75° here today, supposed to get to 80 on Monday and will be just a tad cooler than that on Tuesday. Now that's not really hot, but I'm on the third floor of a brick building facing west. Consider my room to be a pizza oven and the sun is just the fire.

So since it will be too hot to cook for the next two days, I decided to get pizza.

I was supposed to bring home an air conditioner today that was offered to me, but when we hauled it out, it turned out to be an air ionizer. So next month I'm getting a window unit and I don't care if I have to eat beans for a month. I'm sick to death of the heat already. And it's not even summer yet!

With coaching from Kayelle, I cooked my first beer can chicken. Except I used wine. :ermm: And it ended up being a Coke Zero can. :LOL: I was working out great...until I forgot about the can of wine IN the chicken as I went to lay it down on the cutting board. :ohmy: Let's just say the kitchen will be really clean when I finally get around to it.

Starting in the noon position, we had roasted cauliflower with a hazelnut-based dukkah; zucchini with Greek seasoning; chicken with shallots and lemon, seasoned with half Lake Shore drive and half Parisian Bonnes Herbes; and roasted carrots with Aleppo chili. A small piece of baguette with real butter was the perfect touch. Meanwhile, He Who Carved the Bird made off with all of the crispy skin. :glare: :LOL:

The two bowls on the outsides are from a set of Pioneer Woman measuring cups. The one in the middle is from Mexico.

I bet it is, Kay. No, I just used a bit of BNB beef stock, along with the powdered mushrooms I ground up. Plenty mushroomy! I really like a tad of sherry or port in mushroom soup too, really amps up the flavor.

The photo will go on my blog along with the recipe for the video. For the photo to get shared on Pinterest etc it really needs to pop. I needed some small bowls and was at WalMart and they had them. Mixed with the one from Mexico they do work for the photo.
 
DH grilled some chicken drumsticks and I made potato salad and a green salad to go with them. Some of the greens are from our garden. I also baked a loaf of bread today, so we had that toasted and buttered.

GG, I'm coming to your house! YUM!

We had a "southern dinner" tonight. Country ham, cheesy grits, and artichokes. For dessert, there was mint ice cream and minneolas.

CCL...artichokes...mmmm...one of my fave foods.

I wonder where Joey is? I miss seeing his dinner pics. :(
