Sunday dinner menus, July 29th

Last night was another "leftover" makeover - lol!!! I sliced green, red, orange, & yellow bell peppers in half & stuffed them with a mixture of leftover Spanish rice, a LARGE can of tuna in oil (the oil thankfully drained onto the the cats' dry food bowl - lol), & approximately 2-3 cups of grated sharp cheddar cheese. Sprinkled the top with hot Hungarian paprika & settled them into a baking dish with a half-&-half mixture of dry white wine & chicken broth. Baked them at 450 for 20 minutes, then reduced the heat to 400 & poured a can of Green Enchilada Sauce over the top of the peppers & baked them for 20 minutes more. Came out quite good, with lots of leftovers for lunch!!
