I made oven baked tacos today. Fill soft corn tortilla shells with favorite fillings. Sprinkle with cheese. Bake in a hot oven for 10 minutes until cheese melts and edges get crispy. The shells hold each other propped upright in the baking pan. Put on remainder of taco fixings, I used a dollop guac, some fresh salsa and sour cream.

While I like finger food, this turned out to be a knife and fork production. Maybe I over filled the shells? I did break off parts of the crsip shells to scoop guacamole. Interesting and tasty. I'll probably make regular tacos next time.

Just a basic all-American meal. Roast beast with gravy, mashed potatoes, buttered mixed veggies, iced tea, and pistachio pudding with whipped cream.
