Sundays and a roast dinner just go together. Then maybe later that week, leftover roast sliced thinly for Au Jus dip, french fries and coleslaw... ( I like that dinner on Saturday nights).

Last night we had our belated Cinco de Mayo meal. Margaritas followed by wonderful Chicken Enchiladas, spicy refried beans, rice, & a salad. Decided to save the "Crab & Goat Cheese Nachos" for another night, since the last time I made them they ended up being a meal in themselves.
