Finally made the Ribollita, a "Tuscan stew of vegetables, beans and bread". I wasn't sure Himself would like it because it included copious amounts of tomatoes. Sometimes he doesn't like them cooked into a recipe. I'm glad to say that he loved this dish! I did too. Cheap, easy, and lots of chopping with my new knife...and NO cuts in my fingers. Yay!

We had ribollita in Florence, Italy in 2009. Oh, it was so good! Traditionally, it's made from leftover minestrone soup with stale bread mixed in. So delicious :yum: I have minestrone on the menu for this week.
 
Make a big pot of it, GG, so you can use the leftovers!

Cheryl, it was delicious. Easy, but I'm a slow worker so it took me a while. :LOL: We finished it with supper tonight, but I still have two Kaiser rolls in my freezer. I used two in the soup yesterday; they were in the freezer a little too long and would have crumbled in sandwiches. I'll save my last two for another pot of this. :yum:
