I took our leftover roast, cut it into cubes and cut the carrots into slices, then heated it all up in the oven with a can of peas added to it. Put it on top of mashed potatoes for Mom, and I had some egg noodles with mine.
 
Pan-roasted chicken thighs and scalloped potatoes with homemade focaccia that I dragged through the chicken drippings :yum: I don't know what possessed me to make scalloped potatoes. By the time I finished them and got them in the oven, I was too tired to make a vegetable. DH had worked late and was tired too, so we went without.
