and a very happy anniversary!
last night, dw made fantastic turkey burgers. they were juicy and delicious. served along with oven baked french "fries", corn, and bush's maple cured bacon baked beans.
after years of my petitions, dw finally stopped pressing the burgers with the spatula to rid them of "fat", as was her habit with beef burgers.
she uses 93% ground turkey, and very gently forms them into balls, then into patties that are just slightly thinner in the middle. she sprays a non-stick pan with pam, then sprinkles salt into it. as the burgers cook, they fill out and become even, or a tiny bit puffy with the juices.
last night, the juices ran down my chin as i took my first bite. i almost squealed with glee.
