James doesn't feel well (caught a cold from someone at work), and wasn't in the mood for anything spicy or acidic. We had macaroni and cheese, with sliced hot dogs cooked in it, and creamed corn. :)
 
Thanks Kayelle! I've got tomatoes coming out my ears. I'd love to hear more about your recipe for Pico de Gallo.

I hope James gets to feeling better soon Barbara. Having a cold in the summertime is miserable.

Shell pasta with sauteed garlic, black olives, herbs, spices, and tuna in a tomato/white wine sauce.

I really don't have a recipe Mama, I just do it by taste, but here's the ingredients....
My Pico de Gallo:
Home grown tomatoes, skinned and seeded, chopped
I use my "slap chopper" for the following, to get a fine dice:
One or two fresh jalapeno pepper, seeds and ribs removed
Several cloves of fresh garlic
White onion
Fresh cilantro
sliced black olives
Salt to taste
Red wine vinegar, and a little olive oil

For the best flavor, refrigerate overnight.

Wonderful with corn chips, as a topping for steak , or really any meat.
