James doesn't feel well (caught a cold from someone at work), and wasn't in the mood for anything spicy or acidic. We had macaroni and cheese, with sliced hot dogs cooked in it, and creamed corn.
Thanks Kayelle! I've got tomatoes coming out my ears. I'd love to hear more about your recipe for Pico de Gallo.
I hope James gets to feeling better soon Barbara. Having a cold in the summertime is miserable.
I really don't have a recipe Mama, I just do it by taste, but here's the ingredients....
My Pico de Gallo:
Home grown tomatoes, skinned and seeded, chopped
I use my "slap chopper" for the following, to get a fine dice:
One or two fresh jalapeno pepper, seeds and ribs removed
Several cloves of fresh garlic
White onion
Fresh cilantro
sliced black olives
Salt to taste
Red wine vinegar, and a little olive oil
For the best flavor, refrigerate overnight.
Wonderful with corn chips, as a topping for steak , or really any meat.
