I am making stuffed shells using Kathleen's home made ricotta and mozzarella.

Will have a salad with it as well.
 
Neither one of us felt much like cooking so we had grilled cheese with salsa and sliced onion on whole grain bread and Habitant pea soup. It was a very successful, low effort meal.
 
Threw something together in the dutch oven with chicken thighs and several canned goods, so we'll see how it turns out after low and slow in the oven.

Well, that turned out pretty darn good. I'll post the recipe if anyone wants to give it a try. Think I'll call it Pollo Pisole :D
 
After shopping and a visit with a girlfriend, I took a nap then got up and grilled a Pastrami & Swiss on Rye w/brown mustard. YUM!

PS, KL: Me want recipe too!
 
Black bean quesadillas with sauteed garlic, red onion, red bell pepper, mushrooms, etc., and extra sharp cheddar.
