Z, I hate to say it, but that stuffing mix may have more carbs in it than plain white bread. Something like Stove Top brand has 21 grams of carbs per ounce, whereas the same size portion of white bread has 15.
I use equal parts of oatmeal and grated Romano cheese to replace the breadcrumbs. Spread over 4-6 servings it does not increase the carb count that much.
If I make it with lean ground turkey I add a packet of GOYA powdered beef bouillon to each pound of ground turkey for a beefurkey loaf. I also use the beefurkey mixture for meatballs and burgers.
