You could probably take a half chicken and do the same thing. (protecting the wing uup in the air)
Oops - I just remembered we're not supposed to post recipes here - I can supply it if you'd like. It is much easier than the way it is done in professional kitchens. Of course, never having tasted Zuni's I can't really compare - I'll just take their word that it is pretty darn close!
