Tuesday May 3rd... what's cookin'?

Thanks to Sir_Loin_of_Beef, I am making mashed potatoes. I am having a hamburger steak and DH is having eggs. We have to keep it simple. DH is getting over a three day lurgi with the runs and I still can't make "the claw", so I'm only cutting stuff with a paring knife and DH is being very gentle with his tummy.
 
We had babyback oven barbecued ribs, mixed green salad, and jasmine rice that was cooked in half water, half coconut milk, with fresh pineapple, fresh mango and green onion added after it was cooked. I'll sure be doing that again.
