Turkey carcass ideas

I know I could make turkey soup or turkey and dumplings with the carcass. What do you guys plan to do with yours?

You could just make a stock with the carcass and freeze it until yu decide what to make.

I use it for soups or other dishes where the stock flavor will make an impact. You could use it for a risotto.

I have a giant pot of stock simmering right now with our carcass. I do as Andy says, make it up and then freeze it in various quantities to use in soups, stews, gravies, you name it, for quite awhile.

I freeze it in ice cube trays, then transfer to a plastic bag. Then I can use a little or a lot.
