Veggie Baskets

I made these for friends at the weekend. We were supposed to be having a BBQ, but as usual it rained! I found some filo pastry in the freezer & made some baskets then stir fried the veggies to fill them up!

with a little parmesan sprinkled on top

Once you've made the baskets, you can fill them with anything you fancy, as long as it's already cooked. I also tried them with bacon bits sprinkled over the top. mmmmmmmm
