Yet to make up my mind, but definitely pondering a tomato based dish with rice. Thinking of including some paprika, black olives, make a thick tomato sauce, mushrooms... I feel a dish idea coming on :LOL:
 
It's good to be back! I was away for a bit...

Pulled pork leftover from a couple butts I did on New Years, corn stripped from the cob and frozen from the fall, and KFC cole slaw. Oh and I made rolls for the pork sammies!
 
I got some awesome 2" thick loin lamb chops at Costco today. I seared them on all sides in a CI skillet and finished them in a 450 degree oven for 5 minutes. They were perfectly med. rare. Tri colored rice and oven roasted fresh asparagus finished the meal. Ohhhhhh Yeahhhhhh. :chef:

Nice! We will be going out for dinner tonight (business stuff) I was thinking about steak but now I may have to do lamb.
